This Burmese Noodles is a one-pot easy version that has all the wonderful flavors of the original. A warm bowl of tender noodles and chicken cooked in creamy coconut curry broth makes this a hearty and comforting meal. It can be made in the Instant Pot or stovetop.
Ingredients Serves Four
- 225g Perfect Earth Rice Pasta – Black Rice & Padthai
- 3 tsp Chilli Powder
- 35g Chopped Garlic
- 35g Chopped Ginger
- 40g Chopped Onion
- 40g Chopped Lemongrass
- 4 tbsp Rhine Powder
- 300g Boiled Soybeans Pounded
- 2½ tbsp Paparika
- 325g Coconut Milk
- 3 tbsp Sugar
- 1/2 tsp Salt
- 75g Water
- 150g Chicken
Directions
- Bring 4 cups water to a boil. Add Perfect Earth Rice Pasta – Black Rice to the boiling water. Stir Gently and cook for 8-9 minutes or until you reach desired texture.
- Rinse pasta in cool water and drain. Set aside.
- Boil chicken and soybeans, bring the cooked soybeans and grind them thoroughly.
- Boil water, put coconut milk in the pot when coconut milk is boiling then add ginger, onion and lemongrass.
- When everything is boiling then add rhine powder, soy bean and paprika. You can add salt and sugar for more taste.
- Pour curry to a bowl then add pasta. Top with chicken, onion and coriander.
- Serve immediately.
